{"id":208,"date":"2020-02-28T18:14:56","date_gmt":"2020-02-28T18:14:56","guid":{"rendered":"http:\/\/cdmf.org.br\/en\/?p=208"},"modified":"2020-02-28T18:14:57","modified_gmt":"2020-02-28T18:14:57","slug":"protective-bio-shell-could-extend-egg-shelf-life","status":"publish","type":"post","link":"https:\/\/cdmf.org.br\/en\/2020\/02\/28\/protective-bio-shell-could-extend-egg-shelf-life\/","title":{"rendered":"Protective bio-shell could extend egg shelf life"},"content":{"rendered":"\n<p>By <a href=\"https:\/\/www.scidev.net\/global\/author.rodrigo-de-oliveira-andrade.html\">Rodrigo de Oliveira Andrade<\/a> &#8211; SciDev Net 28\/2\/2020<\/p>\n\n\n\n<p> [S\u00c3O PAULO] A biofilm developed in Brazil could extend the shelf life of eggs in the world\u2019s poorest and hottest regions, where they spoil faster and are vulnerable to germs.<\/p>\n\n\n\n<p>According to its creators, the new technology could extend eggs&#8217; lifespan from 30 days to 50, or even 60, days, depending on storage conditions.<\/p>\n\n\n\n<p>The technology mixes chitosan \u2014a natural polymer extracted from the shell of crustaceans such as shrimp, lobsters, and crabs\u2014 with quaternary ammonium salts, chemical compounds that have antimicrobial properties and are commonly used in controlled concentrations in food industries and as domestic sanitisers.<\/p>\n\n\n\n<p>From this mixture, researchers obtained a liquid that is sprayed directly on the eggshell, or mixed in the product disinfection bath at the sanitising stage.<\/p>\n\n\n\n<p>Once the liquid dries and returns to its initial state of polymer, it forms a biofilm capable of preventing fungi and bacteria from forming on the egg\u2019s surface or penetrating the shell\u2019s pores.<br><\/p>\n\n\n\n<h3 class=\"wp-block-heading\">\u201cIt can be said that this biofilm is a social technology that can be used to meet hunger problem in world&#8217;s developing regions, which do not have a proper sanitary infrastructure for the conservation and maintenance of eggs, fruits, vegetables and others foods.\u201d<\/h3>\n\n\n\n<h4 class=\"wp-block-heading\">Eduardo Jos\u00e9 Arruda \u2013 Federal University of Grande Dourados, Brazil<\/h4>\n\n\n\n<p>It is expected to be available for commercial use within a year.<\/p>\n\n\n\n<p>\u201cWe are still carrying out additional studies to apply the technology on an industrial scale,\u201d says Eduardo Jos\u00e9 Arruda, an industrial chemical engineer at the Federal University of Grande Dourados (UFGD), and one of the new biofilm creators.<\/p>\n\n\n\n<p>The new technology could help fight Salmonella, a bacterium that infects about one per cent of chicken eggs and can cause severe gut infections, with symptoms including fever, nausea, and vomiting. It can even cause death in some cases.
